Craft Spirits


There's a reason we've been doing this since 2015 — craft can't be rushed. Every small batch we produce starts with ingredients sourced from the land around us, because we believe what grows here tells a story worth bottling. Come learn that story firsthand with a tour and tasting of our award-winning spirits, or take it home in a bottle.

We are a true craft distillery using locally sourced ingredients to reflect the beautiful terroir of Northern Idaho. Visit our distillery for tours and tastings! We are open on Saturdays for tours. Please schedule a tour and tasting with us before arriving.

Honey Spirits

Up North Distillery is one of six distilleries nationwide that manufactures spirits using 100% honey in the mash. We first create mead and then distill it. Handcrafted and distilled from 100% pure honey, yet never sweet, this clear libation is a new addition to the world of spirits. Thanks to the pristine nature of honey, its delicate and distinct taste is unparalleled.

Every spirit is distilled in small batches on our copper pot still using locally sourced grains, honey, and seasonal ingredients inspired by our Northwest landscape. 

Craft Whiskey Made In Idaho

Similar to the beautiful hills and mountains of North Idaho, this Single Malt Whisky is worth exploring time and again.

Pine Liqueur

In addition to Honey-Based spirits, Apple Brandy, and Single Malt Whiskey, we produce Pine Liqueur. We climb trees and hand forage pinecones from North Idaho White Pine trees in our favorite spot on the Coeur d'Alene River, when they are in their perfect season and color.

Brandy

America’s oldest distilled spirit. The only thing more American than apple pie might be apple brandy. Beating even bourbon to the punch, the beginnings of American apple brandy stretch back to the 1600s. Made from freshly pressed Washington apples, our small-batch Apple Brandy is copper pot distilled in the traditional method to deliver layers of complex flavors.

Tour & Tasting
